So Maybe I AM Crazy

That blog post I mentioned yesterday? Today it's dated the 23rd and there's another above it dated the 23rd and new one dated the 24th. I'm losing my mind. Obviously.

Anyway, that's not really what this post is about. Today is Wordy Verbose Wednesday. Except this time with photos. Because I'm a rule breaker. And if I can bore you with words, I can also bore you with photos. I'm just fun like that.

So. For the past two days I've gotten up at 5am and walked with Denise. Yes. Five. In the morning. I'm not even kidding. I've read in a few places that said morning activity gives your metabolism a boost and is also heart healthy. Since I have a family history of heart disease (both sides!) I figured I should give it a shot. Besides, I'm not doing anything at 5am anyway. Besides hitting the snooze button three times.

So. Yeah. Yesterday was a stumbling mess. I'm not all that "together" when I first get up. Hot shower usually cures that. But not showering pre-walk. I did, however, managed to not hurt myself. Yay me! Then today went a little smoother. All in all, I'm going to try to stick with it. I can't tell that it has amped up any energy but it hasn't hurt, either. Unless you count the extra thirty minutes I could have been laying in bed hitting the snooze button.

I've also still been walking in the afternoons, too. Thirty minutes a day is the heart healthy recommendation, doncha know. And so far this week I've felt good, my knee has felt good(ish) and I've managed to muddle through.

Well, everyday but Monday. Monday I went home with the headache from you-know-where and I don't know about ya'll but kicking and side-stepping and knee lifts are just not conducive treatments to a headache from you-know-where.

So instead of walking, I popped an Advil, guzzled a couple glasses of water and cooked this:




And it was calorie laden and completely delicious and I thought about eating both halves. But wait, what is this, you ask?  It is what I fondly call a "Pizza Empanada."

It is merely one refrigerated pie crust cut in half, each half filled with cooked sausage, pepper, onion, mushroom and cheese with an herb flavored tomato paste sauce. Bake at 400 for about 12-15 minutes until the crust is golden and...And...I only managed to not eat both halves by reading the nutrition label for the calories of the crust. *Eep!*

It's kinda like a calzone except instead of pizza crust I used pie crust.  The pie crust made it special, I think.

I love pie crust.

Anyway, speaking of cooking, Jen will be pleased to know that I made this Sunday:



That, my friends, is Jen's sweet fluffy omelet. It was a cinch to make and actually does taste a bit like a pancake! I think I may have gotten it too brown, though. Jen? What'd'ya think?

Oh, and I may have mentioned that Sis1 was coming for her birthday this past weekend. Would you believe I did not take the first photograph the entire time? Of course, they ended up only coming for the day Saturday. Stuff happened so they had to do a turn around trip.

But yeah. I didn't take any pictures. I just wasn't feeling it. Can't say why, except that it was cold and rainy and I had better things to do. Like play with kids and eat.

Mama managed to take a couple of shots, though.




Yes, we made her wear the "hat." She was a good sport about it, bless her heart.

And how weird is it that my big sister is officially pushing 40? Seems like just yesterday she was the moody rebellious 16-year-old from hell. And yes. Her moody rebelliousness was bad enough to warrant a "hell" instead of a "you-know-where." hehehe

Ack! I got to git. I'm being paged by my cookie pushing friends to go on break. Ya'll got off lucky this time!

So Awesome! I'm totally in awe that you tried my recipe! Did you like it? I do like mine just slightly less brown than that, but I have a hard time getting it just right every time as well. I also top it with a nice dollop of fat free cool whip. Yum! I've gotten to where I want this nearly every morning.

Good for you with your walking every day! You're so dedicated! I'm not doing nearly as well. I get an exercise in most days, but not every day.

Ooh, and your pizza empanada looks to die for! I can't wait to get to the point that i can try it!

If I'd had any cool whip I'd've totally spread some on. Since I didn't, I poured a couple tablespoons of warm maple syrup over it like it was a pancake. It was fairly awesome. I'll definitely be making it again. :)

As for the walking, I'm doing my best to stick with it. It's early days, yet. I just keep reminding myself that I don't like surgery so I don't want to ever have to have bypass surgery due to heart problems. lol It's working so far, at least to get me out of bed at 5am. If I can just keep my knee and feet strong and healthy...

In college, there was a place we used to order from every once in a while that served something like your empanada, except they were deep fried and called ponzas. Loaded with grease, but OMG were they good! They were so big, and stuff so full, I could never eat an entire one in one sitting.

Wait, what? They fried it?? Oh my gracious. I don't want to think about it lest I be tempted. LOL

ROFL... Yes, they fried them. As I said, very greasy, but also really, really good. There's a reason we did not have them more than once or twice a semester.
